Spinach & Artichoke Dip
No matter what party is being thrown, this appetizer is a simple crowd pleaser your friends are going to LOVE!
Ingredients
- 1 whole1 whole1 whole Cream Cheese, Light, (250g, room temp)
- 2 cloves2 cloves2 cloves Garlic, grated

- 285 ml285 ml285 ml Artichokes, (grilled and in olive oil, chopped small
- 2 Tbsp2 Tbsp2 Tbsp Salt and Pepper, (to taste)
- 4 cup4 cup4 cup Spinach, ( I used fresh spinach in which I froze)
- 0.333 cup0.333 cup0.333 cup Mozzarella, (grated)
- 0.333 cup0.333 cup0.333 cup Parmesan Cheese, (grated)

- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil Mayonnaise, (or regular mayo)
- 0.333 cup0.333 cup0.333 cup Sour Cream, (room temp)
- 0.333 cup0.333 cup0.333 cup Mozzarella, (graded extra for topping)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F
- On a cutting board, chop up your artichokes into small pieces and set aside, reserving some of the olive oil in the jar
- In a pan over medium heat, add a tbsp of the artichoke olive oil and grate in your garlic cloves, give that a mix for about 1 minute
- Add in your frozen fresh spinach and mix it around, allow to cook down for a few minutes, until spinach has shrunk in size, set aside to cool down
- In a medium-sized bowl add your light cream cheese, salt, pepper, chopped artichokes, spinach, mozzarella, parmesan cheese, sour cream, and mayo and mix!
- Spray your baking dish of choice (an 8x8 or 7x7 works perfect for this!) with neutral oil (I like to use avocado oil)
- Place your mixture into your baking dish and smooth out evenly
- Top the mixture off with the extra bit of mozzarella cheese
- Bake in the oven for 20 to 25 minutes or until golden brown
- Allow to rest on counter for approx 10 minutes and then you're ready to dig in!
- I like to serve this right away on some small italian panini breads
- Crackers or crostini also works well. Enjoy!
Notes
If you'd like to make this appetizer before hand, you totally can. Simply follow the recipe until the step for baking. Place your dip in the fridge and remove approx 30min before having to bake to allow ingredients to come back to room temp for best results.
