Spinach & Feta Omelette (Edit recipe)

This Spinach & Feta Omelette is one of the many recipes I ate to lose 60 lbs. and keep it off at 52 years old.  Not only enjoy this recipe but be proud of what you made!  Lots of protein and nutrients in this breakfast.  Easy and quick to make.  This combination of egg, spinach and feta is amazing and I really enjoy having this for breakfast.  It almost feels like a treat first thing in the morning.  I hope you enjoy it as much as I do!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Crack two eggs and whisk. Cut 1 inch cube of feta and crumble right into egg mixture. Wash and prepare baby spinach. Heat skillet to medium heat. Add Spinach to skillet and stir till wilted. Add egg mixture to spinach and sprinkle with salt and pepper to taste. Once fully cooked slide onto plate and enjoy with your favorite side of toast. I used 100% whole wheat toast.

Notes

You can add 1 tsp of milk to your egg if you prefer Play around with seasoning like garlic powder would be great too! To reduce fat content you can eliminate one or both egg yolks and use only egg whites Also, Cheddar cheese instead of feta and topped with hot sauce is amazing too!
