A beautifully seared steak, crispy baked fries, and fresh chimichurri sauce—this combo is pure heaven! I love cooking my steak to a perfect medium rare, and I prefer baking or air frying the potatoes for a lighter take on this classic. The bright chimichurri sauce,  packed with garlic and parsley, elevates the steak’s rich flavor -- while the crispy frites add a satisfying, guilt-free crunch. Provecho amigos!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. For the potatoes- Preheat oven to 425 degrees Fahrenheit. Peel and cut potatoes to desired thickness. Soak in water for at least 15-30 minutes.
  2. Pat your potatoes dry and add to a large bowl. Add your salt, garlic and onion powder, and oil and toss.
  3. Place your seasoned potatoes to a baking sheet and cook for 15 minutes.
  4. After 15 minutes toss potatoes and sprinkle salt. Return to oven another 25-30 minutes. Fries shouldl be golden brown and thoroughly cooked.
  5. OPTIONAL: switch your oven to broil and broil your fires the last 2-3 minutes to get extra crispy.
  6. For the chimichurri- In a small bowl, whisk together oil, vinegar, garlic, salt, oregano, and red pepper flakes.
  7. Stir in chopped parsley and combine ingredients.
  8. Season with salt to taste.
  9. For the steak- Preheat a cast iron. or stainless steel pan for at least 3-5 minutes.
  10. Season both sides of steak with salt and pepper.
  11. Take your steak and sear on medium-high heat for 1-2 minutes, depending on thickness.
  12. Flip steak, cook for one minute. Add rosemary, garlic clove, and butter at this point and using a spoon baste the steak with melted butter.
  13. Sear the edges of the steak for about 30 seconds per side.
  14. I like my steak medium rare/medium, so I like to pull my steak when it reaches 125 degrees Fahrenheit. Let your steak rest about 10 minutes and it will finish cooking. My steak is usually done when it reaches 130-135 degrees Fahrenheit.
  15. Slice against the grain, serve with fresh baked fries and chimichurri sauce. Provecho amigos!
