Strawberry Shortcake Cottage Cheese Mousse
Protein packed, silky smooth strawberry mousse, with a homemade protein whipped cream & strawberry crumble topping! I used my favorite clean ingredient protein powder from Just Ingredients here- strawberries n cream flavor for the mousse & French vanilla for the whipped cream! Ingredients
- 16 oz16 oz16 oz Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Cashew Butter

- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup
- 0.33 cup0.33 cup0.33 cup Strawberry Protein Powder - Nuzest, *

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- .75 cup.75 cup.75 cup Heavy Whipping Cream
- .25 cup.25 cup.25 cup Vanilla Protein Powder

- .25 cup.25 cup.25 cup Powdered Monkfruit Sweetener - Lakanto, Or organic powdered sugar

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Arrowroot Flour
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend cottage cheese ingredients together until smooth, scraping the sides as needed
- If you don't have strawberry protein powder you can use French vanilla and add 3-4 tbsp freeze dried strawberries
- Pour into glass jars are refrigerate. Can eat right away, but it thickens and gets even more delicious as it sits in the fridge a couple hours (overnight is fine also)
- If using whipped cream- chill a mixing bowl, then add heavy cream, protein, and powdered sugar and whip until smooth
- If using monkfruit instead of powdered sugar you'll want to add 1-2 tbsp arrowroot flour to help thicken it
- Keep whipping until whipped cream texture achieved (5-7minutes)
- Pipe onto mousse and top with crushed vanilla cookies and freeE dried strawberries
- Enjoy!
- You will have extra whipped cream. Feel free to half the recipe. I use the homemade whipped cream regularly for treats!
