Taco Cauliflower & Avocado Lime Crema

Ingredients
- 1 head1 head1 head Cauliflower, large, leaves removed and enough core so head sits flat
- Avocado Oil Spray
- 222 Lime, one for serving
- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 1 Tbsp1 Tbsp1 Tbsp Ground Cumin
- 1 tsp1 tsp1 tsp Salt
- 1/4 cup1/4 cup1/4 cup Cilantro
- 1/4 cup1/4 cup1/4 cup Mayonnaise
- 1/4 cup1/4 cup1/4 cup Kite Hill Sour Cream Alternative, (or Whole30 dairy-free sour cream, if necessary)
- 111 Avocado, large
- 111 Lime, juiced
- 1/4 cup1/4 cup1/4 cup Cilantro
- 1 clove1 clove1 clove Garlic
- Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425F and line a baking sheet with parchment paper.
- Spray entire head of cauliflower with oil.
- Combine spices and sprinkle over entire head.
- Squeeze juice of 1 lime all over head.
- Roast one hour or till tender.
- Meanwhile make the crema.
- Combine all ingredients in blender and blend till smooth and creamy.
- Serve cauliflower with limes and crema on the side.
- Enjoy!
