foods I wish existed 👉 healthier, balanced lunchables.💡 this is my 3rd glow-up of the iconic pizza lunchable, but this round gets a taco twist. 🌮🍕 mini simple mills pizza crusts gets boosted with BEEF LIVER & HEART MEAT STICKS (because yes, I’m a dietitian 😉), loaded with siete's refried beans, salsa, cheese, & veggies. and of course… there’s always room for a little sweet treat. protein-packed, flavor-stacked, & seriously fun to eat. 🙌
Ingredients
mini “naan” pizza crusts
- 9.8 oz9.8 oz9.8 oz Almond Flour Pizza Dough Baking Mix - Simple Mills, 1 box
- 1 Tbsp1 Tbsp1 Tbsp Psyllium Husk, Ground

- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 4-6 Tbsp4-6 Tbsp4-6 Tbsp Water
toppings
- Vegan Refried Black Beans - Siete Foods, or refried pinto beans

- Salsa Verde, or any salsa of choice

- Grass-Fed Beef and Organ Meat Sticks - Lineage Provisions, I used the southwest flavor

- Pepper Jack Cheese, or cheddar, shredded
- Lettuce, Romaine, finely chopped
- Tomato, diced
- greek yogurt ranch dressing (click for recipe), I used the jalapeño flavor
- Traditional Tortilla Chips - Masa, for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
mini “naan” pizza crusts
- preheat oven to 375.
- in a large bowl, combine pizza crust mix & psyllium husk.
- in a separate bowl, whisk together greek yogurt, ACV, & water.
- add liquid ingredients to dry & create into a dough; add any additional water as needed.
- cut dough into ~20 pieces, then flatten out into round little discs.
- bake for 12-15 minutes (flipping at about 8-10 minutes) or until golden brown on top.
building your lunchable
- to a lunch box, add: mini “naan” pizza crusts —> a container of refried beans - mixed with a salsa to make it easier to spread —> lineage southwest meat sticks —> shredded cheese of choice —> a little container of greek yogurt jalapeño ranch dressing —> any other additional toppings or sides.
- when ready to eat, layer refried beans/salsa mixture, meat sticks, cheese onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.
- top with any other taco pizza toppings you like.
- make sure to serve with a sweet little treat!
