Tallow Heart Fries
Crispy, golden, and cooked in nourishing beef tallow - these heart-shaped fries are the perfect better-for-you Valentine’s appetizer. Think classic comfort food, but elevated with simple ingredients and a rich, savory flavor you just can’t get from seed oils.

Ingredients
- 2 whole2 whole2 whole Potatoes, Russet
- 2 whole2 whole2 whole Sweet Potato
- 1 Tbsp1 Tbsp1 Tbsp Premium Beef Tallow - US Wellness Meats, As needed

- 0.5 tsp0.5 tsp0.5 tsp Sea Salt, To taste

- 1 cup1 cup1 cup Homemade Mayo (click for recipe), Or any avocado oil mayo
- 1 Tbsp1 Tbsp1 Tbsp Truffle Oil, Black
- 2 tsp2 tsp2 tsp Lemon Juice
- 1 clove1 clove1 clove Garlic, Finely chopped

- 1 pinch1 pinch1 pinch Salt and Pepper, Or to taste

- 1 tsp1 tsp1 tsp Rosemary, Dried

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash potatoes, pat dry, peel and slice them into 1/4 inch slices.
- Using heart shaped cookie cutters, cut out as many hearts as you can from each slice. Toss hearts in a bowl of ice water and reserve the scraps for later to make mashed potatoes.
- Place mayo, truffle oil, lemon juice, garlic, salt and pepper into a small bowl and combine. Add in rosemary. Cover and set aside or refrigerate until ready to use.
- Bring a small pot of water to a boil, add in the potatoes. Reduce heat and simmer potatoes for about 3 minutes. Parboiling removes excess starch and makes fries more digestible. Drain potatoes thoroughly and pat fries dry.
- Place your beef tallow into a deep skillet or Dutch oven. Heat the oil over medium-high heat until it reaches 300℉.
- Place fries in the heated oil using your slotted spoon. Cook them for 7-9 minutes, and then carefully remove from skillet and place on a mesh strainer or paper towel lined baking sheet. Sprinkle the finished heart fries with sea salt while they are still warm and serve with rosemary aioli.
