The Best Cobb Salad
Easily one of our favorite salads to make — The Cobb Salad. We’ve made several iterations with different variations, however one thing that’s always consistent is the dressing. Hope you enjoy!
Ingredients
- 666 Romaine Lettuce, (enough romaine for 6 servings)
- 12 oz12 oz12 oz Chickpeas, (1 can)
- 444 Eggs, hard boiled
- 111 Sweet Potato, cooked and cubed, with seasoning of choice
- 3/4 cup3/4 cup3/4 cup Grape Tomatoes, quartered
- 111 Avocado, cubed
- 1/2 cup1/2 cup1/2 cup pepperoncini peppers, sliced
- 1.5 lb1.5 lb1.5 lb Chicken Breast, cooked, 3 breasts
- Salt and Pepper, to taste
- 1/2 cup1/2 cup1/2 cup Extra Virgin Olive Oil
- 1/4 cup1/4 cup1/4 cup Red Wine Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 2 tsp2 tsp2 tsp Dijon Mustard
- 2 tsp2 tsp2 tsp Pure Maple Syrup
- Salt and Pepper, to taste
