Valentine’s Bark (with beets!)
I am not a beet fan, but this beet bark is surprisingly delicious. The beets worked SO WELL in here and the sweetness really came together nicely with the chocolate. You DO NOT taste beet (if you did, I wouldn’t like this 🙃), but you get a beautiful naturally colored fun snack for you and your kids!
Ingredients
- 1 whole1 whole1 whole Pre-Cooked Beets
- 0.333 cup0.333 cup0.333 cup Plain Greek Yogurt
- 0.333 cup0.333 cup0.333 cup Pascha Organic Vegan White Baking Chips, Melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend beet and yogurt together until smooth (it took me a bit but it will happen!) and melt the white chocolate chips in the microwave in 20 second intervals.
- Mix the beet/yogurt mixture with the chocolate and spread on a parchment lined baking sheet into a small square (don’t spread over the whole baking sheet or it will be too thin).
- Freeze for an hour and break apart! Store in freezer.
