Ingredients
For the Cauliflower
- 1 whole1 whole1 whole Cauliflower, Purple
- .25 cup.25 cup.25 cup Garlic Olive Oil - Kosterina

- 2 Tbsp2 Tbsp2 Tbsp Zahtar Spice Blend - The Spice Lab
- 1 tsp1 tsp1 tsp Garlic Powder

- .5 tsp.5 tsp.5 tsp Sea Salt

- .5 tsp.5 tsp.5 tsp Black Pepper

Tahini Sauce
- .25 cup.25 cup.25 cup Tahini
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Water, to thin
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 clove1 clove1 clove Garlic, minced

- 1 pinch1 pinch1 pinch Sea Salt

Garlic Hummus
- 3.5 cups3.5 cups3.5 cups Chickpeas, 1 can, drained and rinsed
- 4 cloves4 cloves4 cloves Garlic, minced

- 2 Tbsp2 Tbsp2 Tbsp Tahini
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Olive Oil

- 1 tsp1 tsp1 tsp Organic Ground Cumin - The Spice Lab

- 1 pinch1 pinch1 pinch Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400°F (200°C).
- Remove leaves and trim the base of the cauliflower so it can sit flat.
- Rub the cauliflower all over with olive oil.
- Sprinkle generously with za'atar, garlic powder, salt, and pepper.
- Roast uncovered on a baking sheet for 40–50 minutes, or until fork tender and lightly browned. (Cover loosely with foil if it browns too quickly.)
- Whisk tahini, lemon juice, garlic, salt, and warm water together until smooth and pourable.
- Blend chickpeas, garlic, tahini, lemon, cumin, olive oil, and salt until smooth and creamy. Add a splash of water as needed to reach desired texture.
- Place the roasted cauliflower on a serving plate. Drizzle generously with tahini sauce. Serve with garlic hummus on the side or spread underneath for a gorgeous plating moment!
