Watermelon Mint Lassi
Who's ready for a new lassi in town?? You are in for a refreshing treat! Watermelon is my favorite fruit and I eat copious amounts of it every summer! It brings me so much joy. While making watermelon popsicles, I ended up experimenting with this watermelon lassi! It's so light, refreshing and summery. It will cool you down on a hot summer day! The mint is a perfect accomplice to the watermelon. Can't wait for you all to make this watermelon mint lassi!
Ingredients
- 3 cups3 cups3 cups Watermelon, Use heaped cups
- 1 cup1 cup1 cup Plain Greek Yogurt, Or yogurt of choice
- 10 whole10 whole10 whole Mint Leaves
- 0.5 tsp0.5 tsp0.5 tsp Cumin, Ground, Can sub with Chaat Masala

- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.25 tsp0.25 tsp0.25 tsp Black Peppercorns, Ground Fresh

- 1 tsp1 tsp1 tsp Honey, Optional

- Chop watermelon into cubes
- Add all the ingredients to a blender and blend well
- Serve over ice and garnish with mint leaves
- You can also add a slice of watermelon to the glass to make it fancy!
Notes
To make this lassi dairy free and whole30 compatible, use nut based yogurt and omit the honey
