French Onion Soup (AIP)
I love a good soup. Usually soup recipes are flexible, soup tastes so comforting, and it only uses one pot!
Living in Hawai’i I only make soup a few months of the year because it is too warm. But you can bet if it is winter I’m making soup a few times a week.
This recipe is SUPER easy made in the Instant Pot. Only a few ingredients and absolutely delicious. Simple is usually best when it comes to highlighting an ingredient.
This recipe is based on the Autoimmune Protocol but you can add a few non-AIP items if you tolerate them.

- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 3 lb3 lb3 lb Onion, sliced thin
- 2 cups2 cups2 cups Beef Bone Broth (Low Sodium)
- 2 cups2 cups2 cups Vegetable Broth
- 4 sprigs4 sprigs4 sprigs fresh Thyme, minced
- 2 sprigs2 sprigs2 sprigs fresh Rosemary, minced
- 1 tsp1 tsp1 tsp Sea Salt
- 1 tsp1 tsp1 tsp Black Pepper, omit is strict AIP

- In an Instant Pot cook the onions in oil on sauté for 15 minutes, stir periodically.
- You can cook it longer to get it golden brown if desired.
- Add the broth, herbs, salt, and pepper, stir.
- Cook on high heat pressure for 15 minutes, let steam release naturally.
- Adjust cooking setting to slow cook and cook for 2 hours.
Notes
You can use all vegetable broth to make this vegetarian. You can add a bit of fresh Parmesan on top if you tolerate it.
