Mini Taco Cups
These mini taco cups are a fun twist on Taco Night! They are delicious and healthy and ready in less than 30 minutes! Tacos can be pretty messy, but these little guys are a perfect little bowl! I chose an 85 percent lean ground beef and black beans for high protein and fiber. I made my own taco seasoning made up of cumin, chili, garlic, onion and paprika. These are made with wonton wraps, which fit perfectly into the muffin cups!
Ingredients
- 1 lb1 lb1 lb Ground Beef, 85 % Lean
- 15 oz15 oz15 oz Black Beans, Organic Can, Drained & Rinsed
- 24 pieces24 pieces24 pieces Wonton Strips, Squares, low sodium
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil, Organic
- .75 cups.75 cups.75 cups Sharp Cheddar Cheese, Freshly Shaven
- .75 cups.75 cups.75 cups Monterey Jack Cheese, Freshly Shaven
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Chili Powder
- 1.5 tsp1.5 tsp1.5 tsp Ground Cumin
- 1.5 tsp1.5 tsp1.5 tsp Paprika
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Salt and Pepper, To Taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 degrees. Drain and rinse Black Beans. On medium heat, add oil and beef and cook 5-7 minutes till no longer pink. Drain fat carefully and then place back on burner. Add 1/4 cup of water, beans and spices. Stir till well blended. Simmer for 5 minutes and stir occasionally. Spray oil on muffin pans and add wonton wraps. Two wraps make a nice base but you can just use 1 wrap in each to keep the calories down. Add 2 Tbsp of beef mixture after cooling a little to each wrap. Sprinkle your cheeses on top. Bake for 15 minutes till edges are slightly browned and crispy. Cheese should be melted. Serve with your favorite toppings. I used shredded lettuce, fresh salsa and a dollop of sour cream and chives.
Notes
In place of ground beef, you can use lean ground turkey or chicken too! Shredded chicken could work also. Any other bean choice like white bean or kidney bean would be great too! These are so versatile! These options are endless! Substition for wonton wraps can be flour tortilla wraps cut into squares too.
