Keto Hong Kong Style Egg Bubble Waffles (雞蛋仔)
This is an egg-based waffle that is very popular in Hong Kong and Macau. Easy to make and super fun to eat! It looks like bubble wrap, and should taste more eggy than traditionally waffles.
Ingredients
- 20 grams20 grams20 grams Almond Flour, sifted twice
- 30 grams30 grams30 grams Unflavored Whey Protein
- 25 grams25 grams25 grams Egg Yolk Powder
- 35 grams35 grams35 grams Swerve Granular (sugar substitute)
- 6 grams6 grams6 grams Gum Arabic (Acacia Gum)
- 4 grams4 grams4 grams Baking Powder, Bob Mills
- 1 tsp1 tsp1 tsp Beef Unflavored Gelatin
- 60 grams60 grams60 grams Unsalted Butter, melted
- 60 grams60 grams60 grams Sparkling Water
- 2 whole2 whole2 whole Eggs, separated
- 3 tsp3 tsp3 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- To a large bowl, sift the dry ingredients through a sieve except for the gelatin powder. Mix well with a whisk.
- To a medium bowl, add in the sparkling water and sprinkle on the gelatin powder. Mix to combine and set aside to bloom for 5 minutes.
- Meanwhile, separate the eggs into two bowls. Whisk the egg whites until foamy and set aside.
- To the bowl of dry ingredients, add in the wet ingredients. Mix gently and let rest for a few minutes.
- Preheat the bubble waffle maker. If your bubble waffle maker is not non-stick, grease the plates with some avocado oil.
- When the bubble waffle maker comes to temperature, pour the batter into each cavity, covering 80% of the cavities.
- Grip and turn the bubble waffle maker continuously in all directions, working quickly. Cook for about 2 minutes until done. Transfer the bubble waffle to a baking rack. Serve warm.
