Monster Cookie Protein Bark
Everyone loves a good monster cookie because they are sweet and salty. This monster cookie protein bark is perfect for the person who loves a monster cookie but is also looking for something with added nutrients. I used PB Fit as my protein powder in this recipe, but you can use any protein powder of your choice. I love anything that taste like dessert but can be called a snack, and this bark is perfect for just that!
Ingredients
For the Cookie Bark Layer
- 0.5 cup0.5 cup0.5 cup Peanut Butter Powder, PB Fit

- 0.5 cup0.5 cup0.5 cup Gluten-Free Rolled Oats
- 0.333 cup0.333 cup0.333 cup Coconut Oil
- 0.5 cup0.5 cup0.5 cup Honey

- 0.333 cup0.333 cup0.333 cup Peanuts
- 0.333 cup0.333 cup0.333 cup M&M's, Milk Chocolate (Plain)
For the Chocolate Layer
- 0.5 cup0.5 cup0.5 cup Semi-Sweet Chocolate Chips

- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1 pinch1 pinch1 pinch Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a mixing bowl, add the PB fit powder, gluten free rolled oats, coconut oil and honey. Mix together until your cookie dough forms. Fold in peanuts and M&M’s. Spread batter onto parchment.
- Add the chocolate chips and coconut oil to a microwave safe bowl. Heat for 1 minute and stir together. Pour melted white chocolate over the cookie dough batter. Top with sea salt. Place pan in the freezer.
- Let it harden, break it and enjoy!
Notes
You can swap out the PB fit with almond butter powder or even a different protein powder of your choice,
To make this recipe completely vegan friendly, swap the honey for agave, and use a dairy free chocolate chips. I used Lily’s Sweets.
I used the Trader Joes M&M’s because they are dye free.
