Homemade Vanilla Extract
Make this homemade vanilla extract recipe based on your budget. The guideline is 2-3 vanilla beans per one cup of vodka. I like to use 5 vanilla beans per cup of vodka, and will add more as needed. I started this jar of homemade vanilla extract on May 11th, 2019 with 25 vanilla beans and 5 cups of vodka. I’ve added a few more beans since then. The less vodka, the more flavour and aromatic your vanilla extract will be.

- Cut the vanilla beans lengthwise using a knife and spread it open, exposing the seeds. Add the beans to an airtight glass jar.
- Add enough vodka to the jar to cover the beans, approximately 3-5 cups. Avoid bending the beans.
- Close the lid and place the jar at room temperature in a cool, dry place. Set aside for at least 6 months before first use, shaking the jar occasionally.
- Top off with more vodka and/or vanilla beans as needed. The vanilla extract will keep indefinitely.
