Tequila Lime Chicken Bowl
This easy and tasty recipe utilizes the tequila lime chicken marinade I posted last week. It is a one pan meal full of flavor and healthy protein and veggies. You can serve it over rice or cauliflower rice if desired.
Ingredients
- 2 whole2 whole2 whole Tequila Lime Chicken Marinade (click for recipe), use two cooked chicken breasts
- 2 Tbsp2 Tbsp2 Tbsp Ghee, Or butter or olive oil
- 1 whole1 whole1 whole Bell Pepper, Chopped
- .5 whole.5 whole.5 whole Onion, Chopped
- 2 Tbsp2 Tbsp2 Tbsp Tequila
- .33 cup.33 cup.33 cup Chicken Broth
- 1 tsp1 tsp1 tsp Arrowroot Flour
- 1 whole1 whole1 whole Lime, Juiced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop the cooked chicken into bite size pieces, set aside.
- In a large pan cook the onions and bell peppers in ghee for 8-10 minutes.
- Add chicken to the pan and stir.
- Add tequila and cook for 1 minute.
- In a small bowl add the arrowroot flour to cool broth and stir to combine.
- Add to the pan and stir, cook for 2 minutes to thicken.
- Turn off heat and add lime juice.
- Serve in bowls or over rice.
Notes
This recipe is flexible and you can use other vegetables as you like, zucchini, cauliflower, garlic, or carrots work fabulously.
