Meatball Chow Mein
This is a fun chow mein recipe that uses hearts of palm noodles and a sugar-free teriyaki sauce. It's Whole30 and Paleo compatible.
Ingredients

- 2 lb2 lb2 lb Ground Pork
- 9 cloves9 cloves9 cloves Garlic, minced
- 2 Tbsp2 Tbsp2 Tbsp Ginger Root, minced
- .25 cup.25 cup.25 cup Cilantro, roughly chopped
- 4 whole4 whole4 whole Green Onion (Scallion), thinly sliced
- 16 oz16 oz16 oz Frozen Vegetables, frozen stir fry vegetables
- 24 oz24 oz24 oz Hearts of Palm, packages Palmini angel hair
- 1 tsp1 tsp1 tsp Sea Salt
- .25 tsp.25 tsp.25 tsp Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 1-2 pinch1-2 pinch1-2 pinch Sesame Seeds
teriyaki sauce
- .75 cup.75 cup.75 cup Coconut Aminos
- 1.25 cup1.25 cup1.25 cup Pineapple Juice
- 1 clove1 clove1 clove Garlic, minced
- 1 tsp1 tsp1 tsp Ginger Root, minced
- 1 Tbsp1 Tbsp1 Tbsp Rice Vinegar
- 2 tsp2 tsp2 tsp Sesame Oil
- 1 tsp1 tsp1 tsp Fish Sauce
- 2 tsp2 tsp2 tsp Tapioca Starch, aka tapioca flour
- 2 tsp2 tsp2 tsp Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small saucepan, combine the coconut aminos, pineapple juice, 1 minced garlic clove, 1 teaspoons of ginger, rice vinegar, sesame oil, and fish sauce. Bring to a boil.
- In a small dish, combine the tapioca flour and the water to make a slurry.
- Whisk the slurry into the boiling sauce mixture. Continue whisking until the sauce thickens. Remove from the heat and set aside.
- In a medium bowl, combine the pork, 5 minced garlic cloves, 1 tablespoon minced ginger, cilantro, green onion, 1 teaspoon sea salt, and pepper.
- Mix thoroughly until all ingredients are evenly distributed.
- Use a spring-loaded ice cream scoop to form the pork mixture into meatballs.
- To bake the meatballs in the oven, preheat the oven to 400 degrees. Place the meatballs on a parchment-lined sheet pan and bake for 17-20 minutes.
- To bake the meatballs in an air fryer, place the meatballs in the basket and cook at 370 degrees for 8-10 minutes.
- In a large saute pan on medium heat, add the avocado oil, 4 minced garlic cloves, and 1 tablespoon minced ginger.
- Saute for about 30 seconds until the mixture is fragrant.
- Add 1/2 cup teriyaki sauce and the frozen stir fry vegetables.
- Cook until vegetables are warm, about 7-10 minutes.
- Add in the noodles and the remainder of the teriyaki sauce. Cook for 5-7 additional minutes.
- Top the chow mein with sesame seeds and meatballs.
- Serve in bowls. Enjoy!
