Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the gluten-free flour, almond flour, cocoa powder, protein powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, coconut sugar, almond milk, melted coconut oil, and vanilla extract.
- Combine the wet and dry ingredients until smooth.
- Make the Salted Caramel:
- In a small saucepan, melt the coconut sugar with the coconut cream or almond milk over low heat, stirring constantly until it thickens and becomes syrupy (about 3-4 minutes). Stir in the sea salt and set aside to cool slightly.
- Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Drizzle a small amount of the salted caramel over the top of each muffin and gently swirl with a toothpick or knife.
- Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out mostly clean. Let cool before serving.
