  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine peanut butter, coconut sugar, granulated sugar, egg, and vanilla extract. Mix until smooth.
  3. Stir in the baking soda and gluten-free oats , and flour until combined. Then fold in the chocolate chips and candy-coated chocolates.
  4. Use a spoon or cookie scoop to drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes, until the cookies are golden around the edges.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
