Chicken Noodle Hidden Veggie Soup (Edit recipe)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add your oil, then place your chicken in your pot sauté your chicken on each side for 3-4 min or until golden.
  2. Remove then add your mirepoix (celery, carrots, onions) plus your garlic.
  3. Add salt and black pepper, then sauté veg for another 2-4 mins.
  4. Deglaze with 8 cups of water, then add your chicken back in and bring to a boil, then reduce simmer for 30 mins.
  5. feel free to skim some of the fat on top, but that is totally optional.
  6. remove your chicken thighs/legs let them slightly cool before shredding.
  7. while chicken is cooling, you can optionally blend your veggies until smooth.
  8. Add your pasta of choice and bring to a boil.
  9. let the pasta boil for about 6 mins.
  10. add your chicken and washed spinach in.
  11. add your spices and more salt and black pepper to taste if neccesary.
  12. simmer for another 20 mins. Keeping lid propped open.
  13. Garnish with Parmesan and greens.
