Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat olive oil in a large skillet over medium heat. Add ground bison and cook until browned, breaking it up into crumbles as it cooks. Remove the bison and set aside.
  2. In the same skillet, add onion and garlic. Sauté until fragrant and the onion is translucent, about 2-3 minutes. Add in ginger
  3. Toss in the diced bell peppers and cook until softened, about 5 minutes.
  4. Return the bison to the skillet, then stir in the diced tomatoes, spinach, cauliflower rice, and seasonings
  5. Let the mixture simmer for 5-7 minutes, stirring occasionally, until heated through and flavors meld together.
  6. Serve with avocado/salsa/ or as is and enjoy!
