we love the breakfast foods: pancakes, eggs, jam, cheese, meat, etc. so why not put it all into one giant stack & make a quesadilla out of it! this little guy is full of every flavor imaginable & is seriously so darn tasty!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. to a small skillet, saute peppers, onions, & meat.
  2. in a bowl, whisk together eggs, salt, & pepper.
  3. pour eggs into skillet with veggies & meat, then scramble.
  4. spread chia smash jam onto each pancake, then add scrambled egg mixture, slice of cheese, & other pancake half.
  5. place pancake quesadilla into skillet & cook for 2-3 minutes on each side or until pancake is crisp & cheese is melted.
  6. option to serve with maple syrup on top or to dip in!
