Crunchy Salmon Bites
These Crunchy Salmon Bites are my FAVORITE go to lunch when I have a teensy bit extra time but want to eat quick! My entire family loved these as well!
Ingredients
- 1 lb1 lb1 lb Salmon Filet, Wild Caught, Cut into 3 inch pieces
- 1 tsp1 tsp1 tsp Sea Salt
- 0.125 tsp0.125 tsp0.125 tsp Black Pepper
- 1 whole1 whole1 whole Avocado
- 1 whole1 whole1 whole Jalapeño, thinly sliced (seeds removed)
- 0.25 cup0.25 cup0.25 cup Cilantro, Chopped
- 1 whole1 whole1 whole Lime
- 1 whole1 whole1 whole Rice Paper Wrappers, (whole package)
- 3 cup3 cup3 cup Hot Water, in a bowl
- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil
- 1 Tbsp1 Tbsp1 Tbsp Toasted Sesame Oil
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp Rice Vinegar
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Gochujang (red chili paste)
- 1 tsp1 tsp1 tsp Ginger Root, grated
- 2 whole2 whole2 whole Green Onion (Scallion), chopped
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Sesame Seeds

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Set up all of your ingredients in an assembly line.
- Season all Salmon pieces with Salt and Black Pepper.
- Dip your Rice Paper wrapper into your bowl of warm water for about 10 seconds.
- Lay on flat surface and add Jalapeño Slices, Salmon, Avocado slice, cilantro and squeeze of lime - one on top of the other.
- Fold two sides of the rice paper wrapper inward then fold over the other ends on top of one another until wrapped tightly.
- Do this until all of the salmon are gone.
- Heat your Avocado Oil in your skillet over medium high heat.
- Once hot, place several pieces in the skillet for 3-4 minutes per side.
- Remove from skillet and place on paper towel lined plate.
- Next, mix together your sauce ingredients for dipping into a bowl.
- Dip each piece into the sauce and enjoy!!
Notes
*Play around with the ingredients you add to the center! Other thinly sliced vegetables and seasonings are so fun to try! *If your wrap seems to have a tough time staying closed, get a little warm water on your fingers to dab on the edges and seal them.
