Teriyaki Meatballs
Everyone in my house LOVED these! So easy to throw together for a quick dinner or the perfect meal prep. Some family members at them plain but the teriyaki sauce is delicious! If you’re in a pinch, you can also use your favorite jarred sauce as well. Whatever works for you!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 1 lb1 lb1 lb Ground Chicken
- 2 cloves2 cloves2 cloves Garlic, Minced
- 1 Tbsp1 Tbsp1 Tbsp Ginger Root, Grated
- 1 Tbsp1 Tbsp1 Tbsp Coconut Aminos
- 1 whole1 whole1 whole Egg
- 1 Tbsp1 Tbsp1 Tbsp Mint Leaves, Chopped
- 1 Tbsp1 Tbsp1 Tbsp Thai Basil, Chopped
- 0.333 cup0.333 cup0.333 cup Almond Flour
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.333 cup0.333 cup0.333 cup Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Pineapple Juice
- 1 Tbsp1 Tbsp1 Tbsp Honey
- 1 tsp1 tsp1 tsp Sesame Oil
- 1 clove1 clove1 clove Garlic, Minced
- 1 tsp1 tsp1 tsp Ginger Root, Grated
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Arrowroot Powder
- 1 Tbsp1 Tbsp1 Tbsp Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 degrees.
- Line your baking sheet (or two) with parchment paper.
- Mix all ingredients in a bowl until well combined.
- Use your 1/4 cup scoop to form into balls onto the baking sheet.
- Bake for 18-20 minutes.
- While the meatballs bake, make your Teriyaki Sauce:
- In a small saucepan over medium heat, add all sauce ingredients except arrowroot and water.
- Let it simmer 2-3 minutes.
- Whisk arrowroot powder and water together until combined then add to simmering sauce.
- Simmer 2-3 more minutes then toss the cooked meatballs in the sauce to coat them.
