These grasshopper parfaits are a fun twist on the classic grasshopper pie and are really easy to make, but look so fancy. With layers of mint cheesecake mousse and crushed mint Oreos, these parfaits are an irresistible treat perfect for St. Patrick's Day. They are rich, creamy, sweet, and crazy delicious! Plus, they're gluten and dairy-free.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place 14 Oreo cookies in a food processor and pulse several times until crumbs form. Alternatively, crush in a plastic zipper bag with your hands or a rolling pin. Set aside.
  2. In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth. Add in powdered sugar and peppermint extract and beat until combined and creamy.
  3. Measure 1/2 cup whipped topping to reserve for topping the parfaits.
  4. Add in the rest of the tub of whipped topping and gently fold in with a rubber spatula until combined. Add in a few drops of green and blue food colorings and fold to combine, adding more until it reaches your desired mint green color. The blue coloring is optional but helps to form a more minty shade of green.
  5. In four small jars or glasses, alternate the mint cheesecake mousse with the crushed Oreos. Top with the reserved 1/2 cup whipped topping and remaining whole Oreos.
  6. Serve immediately. If serving later, keep the prepared mint cheesecake mousse in the fridge, then assemble with the crushed Oreos when ready to serve. This keeps the cookies crunchy and not soggy. Enjoy!

Notes

Storage: Store any leftover mint cheesecake mousse in an airtight container in the fridge for up to 7 days. Store leftover crushed Oreos separately in an airtight container or bag on the counter. If you have leftover parfaits already assembled, they will keep just fine covered in the fridge, but the Oreos will be softer and lose their crunch.
