Turkey and Apple Salad with Parmesan Vinaigrette
If you are looking for a way to use your deli turkey besides a sandwich, consider throwing it in a salad for a delicious and protein packed bowl. I love the combination of cranberry, apple, and turkey here. Feel free to add any veggies in your fridge (pickled beets, I see you!). And you have got to try this Parmesan vinaigrette, it is my new go-to!

- 1 bunch1 bunch1 bunch Lettuce, Romaine
- 0.25 cup0.25 cup0.25 cup Apple, Gala
- 1 Tbsp1 Tbsp1 Tbsp Dried Cranberries, Organic
- 3 pieces3 pieces3 pieces Classic Vinegar Marinated Baby Beets - Love Beets
- 1 whole1 whole1 whole Persian Cucumber
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Dijon Mustard
- 0.25 tsp0.25 tsp0.25 tsp Himalayan Pink Salt - Primal Palate
- 0.25 tsp0.25 tsp0.25 tsp Paprika
- 1 Tbsp1 Tbsp1 Tbsp Parmesan Cheese

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all ingredients for the vinaigrette in a bowl and set aside
- Chop all of your veggies and turkey into bite sized pieces
- Sprinkle with cranberries and top with the vinaigrette
