Salmon Rilletes
A French Rillettes is similar to patê, but easier and more affordable to make. Although a true rillettes would have meat cooked in its own fat, using a canned fish in olive oil does just the trick! Although this may not be the most aesthetic dish, it is really tasty! Use it as a spread for your favorite crusty bread, or a personal favorite- potato chips!
Ingredients
- 1 whole1 whole1 whole Salmon, Canned, In high quality EVOO

- 0.25 cup0.25 cup0.25 cup Avocado Oil Mayonnaise
- 2 Tbsp2 Tbsp2 Tbsp Cottage Cheese, Could sub Crème Fraiche
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 0.25 cup0.25 cup0.25 cup Apple, Gala
- 0.25 cup0.25 cup0.25 cup Whole Kosher Dill Pickles - Jersey Pickles

- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 2 tsp2 tsp2 tsp Organic Garden Ranch Seasoning Mix - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Finely chop apples and add to bowl
- Drizzle the apples with apple cider vinegar and let it marinate while you prep the other ingredients
- Finely chop pickles
- Combine Mayo, cottage cheese (or crème fraiche), Dijon mustard, and seasonings
- Add the chopped pickles and apples to the creamy mixture and coat evenly
- Slightly mash the canned salmon to incorporate the oil into the fish
- Add the salmon to the sauce mixture, and combine well with a fork
- Serve with your favorite bread or chips!
Notes
I used cottage cheese here because I love the flavor, and the added protein! If you are not a cottage cheese fan, you can certainly use crème fraiche, sour cream, or even cream cheese!
