Roasted Parmesan Herb Sweet Potatoes
These Roasted Sweet Potatoes are seasoned with a blend of Parmesan cheese, garlic, and herbs. Oven roasted until crispy!
Ingredients
- 3 bunch3 bunch3 bunch Sweet Potato, (peeled and diced into small cubes)
- 3 Tbsp3 Tbsp3 Tbsp Olive Oil

- 4 Tbsp4 Tbsp4 Tbsp Parmesan Cheese, grated

- 2 tsp2 tsp2 tsp Italian Seasoning

- 1 tsp1 tsp1 tsp Garlic Powder

- 0.25 pinch0.25 pinch0.25 pinch Salt and Pepper

- Preheat oven to 400°F. Lightly coat a large baking pan with non-stick cooking spray or line with parchment paper. Set aside.
- In a medium bowl, combine the olive oil, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper. Add diced potatoes and toss to coat.
- Spread potatoes in an even layer onto prepared pan. Bake for 32-35 minutes, or until lightly browned and crispy. Remove from oven and let cool for 5 minutes. Sprinkle with extra Parmesan cheese and parsley, if desired.
Notes
- Leftovers will last in an airtight container in the refrigerator for up to three days.
