Ingredients
- 2 whole2 whole2 whole Eggplant
- .33 cup.33 cup.33 cup Tahini
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 2 Tbsp2 Tbsp2 Tbsp Almond Milk Yogurt
- 2 cloves2 cloves2 cloves Garlic

- 1 whole1 whole1 whole Lemon, juiced

- .25 tsp.25 tsp.25 tsp Cumin, Ground

- 1 pinch1 pinch1 pinch Salt and Pepper
- 2 Tbsp2 Tbsp2 Tbsp Everything Bagel Seasoning

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Roast the eggplant: Preheat oven to 400°F (200°C).
- Poke holes in your eggplant with a fork, place it on a baking sheet, and roast for 35–40 minutes, until it's super soft and collapsed
- Let the eggplant cool slightly, then scoop out the soft flesh and discard the skin.
- You can also keep the skin on for more texture which is what I did
- In a food processor or with a fork, combine the eggplant, tahini, lemon juice, garlic, olive oil, yogurt, salt, and optional spices. Blend until creamy but still a little textured.
- Adjust salt/lemon/tahini to your taste.
- Serve with olive oil on top and your favorite toppings.
Notes
Serve with: Pita chips, veggies, grain bowls, or spread on sandwiches.
