Asian Style Chicken Lettuce Wraps
I forgot that meals like this existed for a while, but I am on the journey to create more simple recipes that are also delicious. This one comes together with just a handful of ingredients, and a delicious sauce that you probably already have most of the ingredients for. If not, you'll only have to grab a couple new things. Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 2 lb2 lb2 lb Ground Chicken

- 1 whole1 whole1 whole Red Bell Pepper
- 0.5 cup0.5 cup0.5 cup Carrots, shredded carrots
- 0.5 cup0.5 cup0.5 cup Baby Bella Mushrooms, diced
- 1 sprig1 sprig1 sprig Green Onion (Scallion), sliced thin

- 6 whole6 whole6 whole Lettuce, Romaine, petite leaves
- 0.25 cup0.25 cup0.25 cup Soy Sauce, or liquid aminos, or coconut aminos

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Rice Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Toasted Sesame Oil
- 1 Tbsp1 Tbsp1 Tbsp Ginger Paste

- 1 pinch1 pinch1 pinch Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat the avocado oil in a large skillet over medium heat.
- Add all the ground chicken. Cook until no longer pink.
- While the chicken is cooking, add all sauce ingredients to a small container and mix/shake until well combined.
- When the chicken is cooked through, add the red bell pepper, carrots and mushrooms. Stir until tender.
- Add the sauce and mix well to combine.
- Add the green onions and toss.
- Spoon the filling into lettuce cups.
- Store filling in an airtight container.
Notes
You can add rice to this to make it more filling. I recommend cooking 1/2c jasmine rice according to package instructions. You can add the rice into the mixture when you add the sauce. I think it would create an even larger serving size and be satisfying too!
