This recipe for Asian inspired tofu lettuce wraps is one of those where you try something on a whim and it turns out really good. A great plant based protein packed meal for a quick lunch or weekday meal! I eyeballed most of the ingredients as I was cooking in my usual experimental style so you can change up the vegetables or sauce based on what you have in your pantry. Honestly it's hard to go wrong with this since it's such a simple recipe, but it sure does hit the spot and is a super healthy meal

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat oil in a pan and add the onions
  2. Sauté for 5 mins till onions are browned slightly and add the snap peas
  3. Squeeze out water from the tofu using paper towels
  4. Crumble and add to the hot pan
  5. Sauté for 10 minutes till tofu is dry and starting to brown
  6. Add the peanuts, carrots and salt
  7. Whisk together all the ingredients listed under the sauce, add water to thin it out if needed
  8. Pour over the tofu and stir around for a few minutes , then turn off the heat
  9. Serve inside lettuce leaves, topped with chili crisp and chopped scallions
