these protein cheesecake bites are high in protein, low in sugar, & next-level delicious. featuring a crumble that has BTR nation chocolate cherry hearts AND their iconic nana joe's granola collab for the ultimate rich, crunchy, cherry-chocolate bliss.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 325.
  2. in a food processor, add cereal & blitz into powder.
  3. transfer cereal to a bowl, then add granola to food processor & puree into granola "butter"
  4. combine granola "butter" & cereal powder to form crust; add water as needed.
  5. add 1 small cookie scoop of crust mixture to the bottom of a muffin tin.
  6. bake crust for ~10 minutes.
  7. clean out blender, then add all protein cheesecake ingredients & blend well.
  8. follow my instructions for making "mixed berry compote", but substitute cherry jam + frozen dark cherries where needed.
  9. pour 1 large cookie scoop of cheesecake mixture on top of each crust, then add a dollop of cherry compote.
  10. using a toothpick, swirl compote into each cheesecake bite.
  11. clean out the food processor again, then add granola, cacao powder, BTR hearts, monk fruit, & sea salt; lightly blitz into a crumble.
  12. transfer to a bowl, then add in nut butter & a little bit of water until more of a crumble forms.
  13. add a sprinkle of crumble on each cheesecake bite, then bake for 25-30 minutes or until set.
  14. refrigerate to allow to complete cool.
  15. optional: melt a few dark chocolate cherry hearts & drizzle on top + sprinkle with freeze-dried cherries.
  16. I store them in the freezer & microwave for 10-15 seconds to thaw.
