Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400°. Line 12-cup nonstick muffin pan with 12 paper liners; lightly spray liners with avocado oil baking spray.
  2. To a large bowl, add butter, cider, brown sugar, and vanilla; use hand mixer to beat on medium-speed (mixture will not be smooth).
  3. To same large bowl, add flour, cornstarch, cinnamon, baking powder, baking soda, and salt. Beat to partly combine. Pour in pear purée; beat until combined and smooth.
  4. Spoon batter into paper liners, slightly overfilling each one.
  5. Bake on middle rack of oven at 400° for 8 minutes, then immediately reduce oven temperature to 350° and continue baking an additional 20 minutes. Cool muffins in pan for 25-30 minutes before removing from pan.
  6. To make brown sugar cinnamon butter, combine butter, brown sugar, and cinnamon in a small bowl. Spread desired amount on each muffin.

Notes

Store muffins in a covered container at room temperature for 2 days, then an additional 2 days in the refrigerator. The brown sugar cinnamon butter will keep in the fridge for up to 1 month. Vegan. Gluten-Free. Egg-Free. Dairy-Free. Nut-Free. Plant-based.
