Crockpot Classic Chicken Noodle Soup
Nothing is better than having a classic chicken noodle soup under your belt. What's even BETTER is being able to dump the ingredients into your slow cooker and go. Come back 6 hours later and your dinner is done! I aimed to keep this simple so you only need a couple ingredients, but of course flavorful so you can feed your family and everyone will be happy.
Ingredients
- 1 whole1 whole1 whole Yellow Onion, diced
- 4 whole4 whole4 whole Garlic, cloves, minced

- 4 whole4 whole4 whole Celery, stalks, sliced
- 4 whole4 whole4 whole Carrots, sliced into rounds
- 64 fl oz64 fl oz64 fl oz Chicken Broth, Low Sodium

- 2 whole2 whole2 whole Chicken Breasts, Boneless Skinless

- 2 sprigs2 sprigs2 sprigs Thyme, Fresh

- 2 sprigs2 sprigs2 sprigs Rosemary, Fresh

- 1 tsp1 tsp1 tsp Salt and Pepper
- 8 oz8 oz8 oz Wide Egg Noodles
- 1 whole1 whole1 whole Lemon, juiced

- 0.25 cup0.25 cup0.25 cup Parsley, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients EXCEPT egg noodles, lemon and parsley to your slow cooker.
- Turn on low and set the time for 6 1/2 hours.
- Check to make sure your chicken is fully cooked and tender (mine usually can't even be picked up with a fork).
- Shred your chicken and place back into the slow cooker.
- Turn off slow cooker.
- Add in egg noodles and stir to combine.
- Place the lid back on the slow cooker for 5-10 minutes or until noodles have softened.
- Once finished, add lemon juice and fresh parsley.
- Give it a stir and serve!
Notes
You can cook your noodles separately on the stove if you wish to avoid the extra 5-10 minute cooking at the end. The noodles will not continue to cook and soften this way.
