 without the corn? maybe not technically cornbread, but this version is so darn good you won’t even know the difference. đŸ€­đŸ’› made with good dee’s keto cornbread mix, greek yogurt for a protein boost, & a can of green chiles (spicy if you must đŸŒ¶ïž) — these keto cornbread waffles are crisp, fluffy, & full of flavor. perfect as a savory side, sandwich bun, or chili night upgrade!

  1. to a large bowl, whisk together greek yogurt, eggs, green chiles, & water.
  2. fold in cornbread mix, adding additional water as needed.
  3. let batter to sit for 5-10 minutes to thicken - if too thick, add a couple more tablespoons of water.
  4. heat a waffle iron & grease with a little butter or oil.
  5. add ~œ cup batter into waffle-iron.
  6. cook until waffles are crisp, ~3-4 minutes.
