This meal looks SO FANCY, but is very simple to make! The flavors complement each other so nicely, and create this cozy comfort food dish that is not only delicious, but nourishing for the body!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400ºF.
  2. Peel and slice russet potatoes as thin as possible. (I use a special kitchen tool to slice them very thin, but you can do it by hand with a knife carefully.)
  3. Grab a baking sheet and line it with parchment paper.
  4. Take 2 1/2 cups of shredded cheese and spread a nice even layer onto parchment paper, covering the whole baking sheet.
  5. Then layer thin potato slices one by one in rows so that the entire baking sheet is covered with potatoes. They should almost be layered in a way that the potatoes look like mermaid scales on top of one another so that no cheese is showing from underneath.
  6. Then add salt, pepper, paprika, and Italian seasoning.
  7. Spray potato layer with avocado oil and bake for 25 minutes.
  8. While potatoes bake, cook your meat mixture. Add Italian sausage to a pan with onion, garlic, tomatoes, marinara and spices. Cook until meat is cooked through.
  9. In a separate bowl, mix ricotta with green onions and seasonings.
  10. When potatoes are done baking, remove from oven.
  11. Spread the cheese mixture evenly over potatoes, and then add your meat mixture. Making sure to spread it evenly over your cheese mixture.
  12. Then carefully and slowly, taking one end of the potato sheet, you will begin to roll it up just like you would a cinnamon roll.
  13. Once it has been rolled up, you will top with some more mozzarella cheese and bake for 10 more minutes.
  14. Remove from oven, and top with fresh parsley. Cut into several rolls and serve warm!
  15. Enjoy!
