Gyoza Meatball Udon (GF)
Sometimes genius just strikes. I have been in a meatball making phase and after a family vacation to Japan I wanted to do something with gyoza flavors. And this is the result. Hope you enjoy the flavors of gyoza in a deconstructed and gluten free way.
Ingredients
Meatballs
- 1 lb1 lb1 lb Ground Pork

- 1 tsp1 tsp1 tsp Sea Salt

- .5 tsp.5 tsp.5 tsp Black Pepper

- 1 Tbsp1 Tbsp1 Tbsp Tapioca Starch

- .5 tsp.5 tsp.5 tsp Ginger, Ground

- .5 Tbsp.5 Tbsp.5 Tbsp Garlic Powder

- 1 cup1 cup1 cup Cabbage, minced
Udon
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 2 cups2 cups2 cups Cabbage, shredded
- 222 Green Onion (Scallion), sliced

- 5 cups5 cups5 cups Chicken Broth, low sodium

- 1 cup1 cup1 cup Water
- 1 tsp1 tsp1 tsp Sea Salt

- 8 oz8 oz8 oz Udon Noodles, I prefer Lotus Foods rice udon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl add the meatball ingredients and using clean hands blend everything together.
- In a large nonstick skillet add 1 Tbsp olive oil and put heat on medium.
- Using a small ice cream scoop, scoop and roll out meatballs, place into pan.
- Using tongs turn over after about 3 minutes. Cook through.
- While meatballs cook prepare udon.
- In a medium saucepan add the olive oil, cabbage, and scallions. Cook on medium high for 2 minutes.
- Add broth and water bring to boil.
- Add salt and udon noodles. Stir and cook according to package instructions. Stir periodically.
- After about 8-10 minutes the noodles should be done. Add meatballs to broth. Stir and enjoy.
Notes
You can use ramen noodles as well they work great too. If you want more protein add a fried egg on top. Trust me.
