yes, I was very intimidated before making a full beef tenderloin… because who wants to mess up the PERFECT cut of meat?! 🥩😅 well here’s your sign to have a little faith in yourself (& your tenderloin 😉). this sear then bake method walks you through exactly how to nail a juicy, buttery, fork-tender filet every. single. time. minimal ingredients, straightforward steps, & next-level results. this is the ultimate show-stopping main dish — elegant enough for holidays or special occasions, yet surprisingly approachable. when done right, beef tenderloin is pure perfection: tender, rich, nourishing, & will absolutely be my holiday tradition moving forward. 💫

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. cut tenderloin in half, then trim off all fat (i only made one at a time & froze the other half to serve later).
  2. tie up each tenderloin up with kitchen twine, pay dry, & season with salt & pepper.
  3. *may do the first 2 steps in advance
  4. 1 hr before cooking, get out beef tenderloin & bring to room temperature.
  5. preheat oven to 425.
  6. heat a large cast iron skillet over medium-high heat, then sear beef tenderloin for 3-5 minutes on each side.
  7. add a couple slabs of better on top of the tenderloin & moisturize into tenderloin.
  8. bake until reaches desired doneness - I went for medium rare which took ~25-30 minutes & pulled it at ~120 - it will rise 5-10 degrees while resting (see notes for other doneness temps).
  9. cover with a aluminum foil & let the tenderloin rest for 15 minutes (this allows all the juices to evenly distribute & makes it less tempting to slice into), then slice into 1” thick pieces.
