Vegan Cashew + Bean Stir Fry
This vegan twist on your classic cashew chicken stir fry features beans crisped to perfection, and a better-than-takeout Chinese style sauce!
Feel free to swap the beans for your favorite protein source (chicken or shrimp would be great here)!
Ingredients
- 1 cup1 cup1 cup Pinto Beans

- 1 cup1 cup1 cup Cannellini Beans
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 2 cups2 cups2 cups Broccoli
- 1 whole1 whole1 whole Red Bell Pepper
- 1 cup1 cup1 cup Snap Peas
- 0.5 cup0.5 cup0.5 cup Baby Carrots
- 3 whole3 whole3 whole Green Onion (Scallion)

- 0.5 cup0.5 cup0.5 cup Cashews, Raw

- 0.25 cup0.25 cup0.25 cup Coconut Aminos
- 2 Tbsp2 Tbsp2 Tbsp Coconut Sugar

- 1 Tbsp1 Tbsp1 Tbsp Rice Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Hoisin Sauce
- 1 tsp1 tsp1 tsp Garlic, minced

- 0.25 tsp0.25 tsp0.25 tsp Ginger, Ground

- 0.5 cup0.5 cup0.5 cup Vegetable Broth
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed with 2 tbsp water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Crisp the beans
- 1. Drain, rinse, and pat beans very dry.
- 2. Toss with 1 tbsp arrowroot starch
- until lightly coated.
- 3. Heat avocado oil in a large pan or wok.
- 4. Add beans and cook 4–6 minutes until golden and lightly crisp.
- 5. Remove and set aside
- Cook the veggies
- 1. In the same pan, add broccoli, peppers, carrots, and snap peas.
- 2. Stir fry 4–5 minutes until crisp‑tender.
- Make the sauce
- 1. Whisk all sauce ingredients except the starch slurry.
- 2. Pour into the pan with veggies and bring to a simmer.
- 3. Add the slurry and stir until the sauce becomes thick, shiny, and coats the spoon.
- Combine
- 1. Add the crispy beans back in.
- 2. Toss until everything is glossy and coated.
- 3. Stir in cashews and half the green onions.
- Serve over Eden Soba Noodles or white rice and finish with sesame seeds and extra green onions!
