Whole30 Cobb Salad with Creamy Pecan Butter Dressing
We love all of the flavors and tasty ingredients in a Cobb salad, and we've taken a healthier twist on the classic and created a Whole30 approved version for you! The dressing is made with our Creamy Pecan Butter and adds a delicious nutty flavor to the mix. Grab your avocado, sugar free bacon, tomatoes, and your protein of choice; you won't want to skip this beautiful salad.
Ingredients
For the salad
- 1 head1 head1 head Lettuce, Romaine, or any lettuce of choice
- 3 pieces3 pieces3 pieces Bacon, cooked and diced (amount of bacon up to you!)

- 111 Avocado
- 111 Tomato, sliced
- 2 2 2 Eggs, hard boiled
- 111 Chicken Breast, grilled and diced

For the dressing
- 1/4 cup1/4 cup1/4 cup Pecan Butter

- 1/4 cup1/4 cup1/4 cup Red Wine Vinegar
- 111 Shallot, finely chopped
- 1 tsp1 tsp1 tsp Coarse-Dijon Mustard - Noble Made

- 1/2 tsp1/2 tsp1/2 tsp Sea Salt

- 1/4 tsp1/4 tsp1/4 tsp Black Pepper

- 3/4 cup3/4 cup3/4 cup Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Assemble all of your ingredients for the salad. If needed, roast your sweet potatoes cubes in avocado oil with your seasonings of choice on 400F for around 35-40 minutes. Put all of the salad ingredients on a plate; we like to group them by ingredient to create a 'rainbow'. You can use the protein of your choice but we recommend using grilled chicken. For the bacon, make sure it is a no sugar added bacon if you are following a Whole30 protocol.
- Put all of the ingredients for the dressing in a bowl and whisk until combined. Pro tip: store the dressing in an old Georgia Grinders jar in the fridge!
- Once the salad is assembled, pour the dressing on and mix. Enjoy this tasty salad with all of the beautiful flavors, healthy fats and proteins!
