5-ingredient Paleo Date Candies (Edit recipe)

When we're craving something sweet, we love making these simple date candies. Filled with creamy peanut butter, and then topped with chopped peanuts, covered in tempered chocolate, and a sprinkle of kosher salt. These are delicious, easy, and dangerously good.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Slice the dates and remove the pits.
  2. Fill each date with approx 1/2 tsp of creamy peanut butter.
  3. Finely chop the peanuts, and sprinkle on top of the peanut butter dates.
  4. Temper the chocolate: Place 1 cup of chocolate chips in a bowl and microwave, 30 seconds at a time, until melted.
  5. Once fully melted and smooth, add the remaining 1/3 cup of chocolate chips and continue stirring until smooth. When completely mixed, the chocolate is tempered.
  6. Dip the dates into the chocolate, carefully spooning the chocolate over the top. Move the chocolate dipped dates to a wire rack over parchment.
  7. While still warm, sprinkle with kosher flake salt. Allow to cool until the chocolate hardens, and serve.
