Asian Lettuce Cups
These lettuce cups are the perfect summer lunch idea, they're easy to make when you're short on time but not short on flavor!
Ingredients
- 1 lb1 lb1 lb Ground Pork
- 4 oz4 oz4 oz Shiitake Mushrooms, diced
- 3 tsp3 tsp3 tsp Garlic, minced
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp Fish Sauce
- 1 tsp1 tsp1 tsp Honey
- 1 bunch1 bunch1 bunch Butter Lettuce
- 1 pinch1 pinch1 pinch Cilantro, to serve
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 1 pinch1 pinch1 pinch Chili Flakes, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Heat a pan on medium heat with choice of oil (I like avocado oil or coconut oil).
- 2. Add garlic, cook till fragrant.
- 3. Add ground pork and mushrooms, cook till browned. About 4-5 mins.
- 4. Add coconut aminos, fish sauce and honey. Toss to mix.
- 5. Season with salt, pepper and red chili flakes. Remove from heat.
- 6. Serve in lettuce cups. My favorite is living lettuce.
Notes
This dish can be made Whole30, simply omit the honey.
