Hidden Veggie Honey Mustard Roasted Potatoes

Ingredients
- 1 lb1 lb1 lb Potatoes, Fingerling, cut in half
- 2 Tbsp2 Tbsp2 Tbsp Original Extra Virgin Olive Oil - Kosterina

- 2 Tbsp2 Tbsp2 Tbsp Honey Mustard - True Made Foods

- 1 tsp1 tsp1 tsp Little Palates Herb Garden Seasoning - Primal Palate

- 1/2 tsp1/2 tsp1/2 tsp Himalayan Pink Salt - Primal Palate

- 1/2 tsp1/2 tsp1/2 tsp Black Peppercorns, Ground Fresh

- 1 Tbsp1 Tbsp1 Tbsp Parsley, finely chopped

- 1 Tbsp1 Tbsp1 Tbsp Chives, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 400 degrees F.
- Wash your fingerling potatoes, pat them dry, and slice them in half. Place them in a large mixing bowl.
- In a small mixing bowl, whisk together the olive oil, honey mustard, Herb Garden spice blend, salt, and pepper.
- Pour the honey mustard seasoning mixture over the potatoes, and stir them to coat evenly.
- Spread the potatoes out on a baking sheet, and bake them for 15 minutes, then flip them, or stir them around, and bake for another 15 minutes, or until they are fork tender and crispy on the outside.
- Sprinkle the chopped fresh herbs on top, and enjoy!
