avocado “toast” on cauliflower flatbread
are you ready for an award winning combo? drumroll… avocado + cottage cheese. maybe it's not that ground breaking, but it is delicious, nutritious, & a great way to get in a balanced breakfast!
Ingredients
- 1 whole1 whole1 whole cauliflower crust flatbreads or buns (click for recipe)
- 0.25 cup0.25 cup0.25 cup Avocado
- 0.25 cup0.25 cup0.25 cup Organic Cottage Cheese
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Nutritional Yeast
- 1 pinch1 pinch1 pinch Salt and Pepper
- 111 Egg
- 2 oz2 oz2 oz Deli Ham
- 1/2 oz1/2 oz1/2 oz Cotija Cheese, or any crumbly cheese of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- microwave cauliflower crust for ~1-2 minutes.
- in a bowl, mash avocado, cottage cheese, nutritional yeast, & seasonings of choice.
- in a small skillet, fry egg to liking & fry ham to crisp up.
- add avocado mash to cauliflower crust, then add ham, fried egg, crumbled cheese, & any other seasonings/garnishes you like.
- I like to serve mine with a side of fruit & radishes to dip extra avocado mixture in.
