Bacon-Wrapped Roasted Carrots
This dish is guaranteed to become your newest obsession. Sweet, buttery, caramelized carrots with salty, crispy bacon. They're sturdy enough to be a finger food but taste fancy and so incredibly balanced. Fair warning that you'll start craving these once you try them because they are just that good!
Ingredients
- 1 lb1 lb1 lb Rainbow Carrots, small
- 1/2 lb1/2 lb1/2 lb Bacon, (or approximately 1/2 slice bacon per small carrot)
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp fresh Thyme, finely chopped, plus more for garnish
- 1 tsp1 tsp1 tsp Ground Fresh Black Peppercorns

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400˚F and line a baking sheet with foil.
- Using kitchen shears or a sharp knife, carefully cut or slice bacon in half lengthwise.
- Starting at the thicker end, wrap bacon around each carrot until fully covered, in a single, non-overlapping layer.
- If you have some bacon left at the end, trim and save to reinforce another carrot if needed!
- Place carrots carefully onto baking sheet in a single layer, trying to keep the ends of the bacon on the bottom side so they're weighed down (don't stress too much about it either way)
- Once all carrots are assembled onto the baking sheet, drizzle with olive oil and evenly sprinkle on thyme and freshly cracked black pepper.
- Place into oven and roast for 25 minutes, or until bacon is fully cooked and carrots can be easily pierced with a fork at their thickest point.
- Using tongs, carefully transfer to a paper towel-lined plate to drain excess bacon fat.
- When plating, sprinkle on extra chopped thyme for garnish, if desired.
- Enjoy!! Try not to eat the entire bunch!
