Bah Mi Noodle Bowl
This asian style noodle bowl is a go to in our house. The bbq pulled pork is very versatile and can be used with many of recipes. Tenderloins tend to come out the best, but I use any pork roast that is on sale. This recipe calls for 2 seperate batches of the bbq sauce. One for cooking the pork in the slow cooker and one for the vegetables. I also never cook my rice noodles according to the package as they never seems to work out. I bring the water to a boil and then soak the noodles for 7 minutes then drain.
Ingredients
- 0.25 cup0.25 cup0.25 cup Tomato Paste

- 2 Tbsp2 Tbsp2 Tbsp Soy Sauce

- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Molasses
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Paprika

- 1 tsp1 tsp1 tsp Onion Powder

- 1 tsp1 tsp1 tsp Chili Powder
- 222 Broccoli, crowns, cut into pieces
- 222 Onion, cut into slices
- 111 Pork Tenderloin, 3-4 lb

- 2 Tbsp2 Tbsp2 Tbsp Lard
- 111 Rice Noodles, 1 package

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In small bowl combine first 8 ingredients and mix well
- Place your tenderloin in slow cooker, cover with bbq sauce
- Turn on low for 6 hours
- Using 2 forks, (or knife and fork if meal isn't at tender) pull the meat apart or cut into pieces and return to low for another hour
- For the noodle bowls:
- In a large skillet, melt lard and add onions and sautee until clear
- Add broccoli and 2 cups of pulled pork.
- Make a second batch of BBQ sauce to pour over veggies and simmered.
- Cook rice noodles according to package.
- Add noodles to bowl and top with BBQ pork and broccoli mixture
- Enjoy!
