Baked Ham, Egg, and Cheese
This is a delicious and easy make ahead breakfast, and you can enjoy it on its own or as a baked ham, egg, and cheese breakfast sandwich. Perfect on a busy weekday morning, everything is baked together for a delicious scramble and you can reheat throughout the week when you are ready to enjoy it. It's also great for cooking for a big group!
Ingredients
- 12 whole12 whole12 whole Eggs
- 4 oz4 oz4 oz Ham, chopped
- 6 pieces6 pieces6 pieces White American Cheese, or yellow, or 1-1½ cup of your favorite shredded cheese
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400 degrees F, and coat a 9x13 baking dish with cooking spray or brush with cooking oil.
- Crack eggs directly into the baking dish, then disperse ham pieces evenly over the eggs. If you want, you can also add any veggies like spinach, tomatoes, or onions.
- Cover everything with American cheese slices. If using shredded cheese, just sprinkle over the whole thing.
- Bake for 14-18 minutes until the egg whites are cooked through and the cheese is lightly browned, melted, and bubbling.
- Use a fork to scramble everything together.
- Sprinkle with salt and pepper, to taste. Enjoy on its own or you can add to a bagel or an English muffin to make a breakfast sandwich. You can also add tomatoes, avocados, or any other veggies you prefer!
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the microwave.
