Banh Mi Bowl (Aisan BBQ Noodle Bowl)
BBQ pulled pork cooked in the slow cooker is one of my go to recipes. I mix it up by creating new BBQ sauce recipes and use the meat in a variety of ways. Vermicelli noodles are a staple in my house as everything tastes better with noodles. The broccoli in this recipe is another cruciferous vegetable packed with immune boosting antioxidants. Put the meat in the slow cooker in the morning, and these bowls come together within 30 minutes of getting home. Great for a week day dinner.
Ingredients
- 0.25 cup0.25 cup0.25 cup Ketchup, or tomato paste
- 2 Tbsp2 Tbsp2 Tbsp Soy Sauce, I like to use Bragg's
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Molasses
- 2 Tbsp2 Tbsp2 Tbsp Maple Syrup, Pure
- 1 tsp1 tsp1 tsp Paprika
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Chili Powder
- 111 Pork Roast, Loin Blade Roast
- 222 Onion, medium
- 111 Rice Noodles, package, cooked according to package
- 1 Tbsp1 Tbsp1 Tbsp Lard

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For the BBQ pulled pork
- In a small glass measuring cup, add ketchup or tomato paste, soy sauce, vinegar, molasses, maple syrup and spices. Mix well.
- In the slow cooker, add your pork roast and pour your BBQ sauce over and set to low for 6 hours.
- Using 2 forks, shred the pork and turn on low for another hour.
- For the noodle bowl
- In a skillet over medium heat, lard, broccoli and onions and saute until onions are clear.
- Add 2-3 cups of the pulled pork.
- Make a second batch of the BBQ sauce and pour over broccoli and simmer while you cook the noodles according to package.
- Add noodles to bowl and top with BBQ pork and broccoli mixture.
- Enjoy
