no chip bag here, instead I'm making it bowl-style nachos! loaded with juicy bbq chicken thighs & all your favorite taco toppings. đ đ¶ïž đ„ đ„Ł
a better-for-you, gluten-free alternative for taco night, game day, or whenever the craving hits & is certified to be a  crowd-pleaser!
Ingredients
bbq chicken
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless

- 1 Tbsp1 Tbsp1 Tbsp Barbecue Rub - Primal Palate

- 0.5 cup0.5 cup0.5 cup No-Sugar Hickory BBQ Sauce - Yo Mama's Foods

- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Water
walking tacos
- sautéed frozen vegetables (click for recipe), I used peppers, onions, & corn
- Black Beans, drained, rinsed, & heated up

- Lettuce, Romaine, finely chopped
- Tomato, diced
- Avocado, diced
- Black Olives, sliced

- Pepper Jack Cheese, or cheddar cheese, shredded
- greek yogurt ranch dressing (click for recipe), plain or the jalapeño version
- Queso Grain Free Puff Snacks - Siete Foods, or puff chip flavor of choice

bbq chicken
- in a large skillet, add fat of choice & melt.
- in a bowl, mix together chicken thighs & bbq seasoning.
- add in chicken thighs to skillet; cook for 6-8 minutes; add in bbq sauce & water; simmer for 5-6 minutes or until chicken is cooked through.
preparing your toppings
- sauté frozen peppers, onions, & corn according to frozen veggie directions.
- warm the black beans.
- dice up lettuce, tomatoes, avocados, & olives.
- shred cheese of choice & place everything in serving bowls
- make batch of plain or jalapeño greek yogurt ranch dressing.
assembling your walking tacos
- choose your siete puff chips of choice & add to a bowl.
- top with bbq chicken, sauteed veggies, beans, cheese, & any of the fresh toppings you like.
- finish with a drizzle of greek yogurt ranch & enjoy!
